Butter shortbread


(M's favourite)

Butter Shortbread 

Makes 40

Ingredients 

325g of Plain Flour
Pinch of Salt
50g of Caster Sugar
225g Butter - leave at room temp 
Extra 50g Caster Sugar for dusting 

Method
Sift flour and salt
Rub in butter until like breadcrumbs 
Add sugar and knead into a ball
Roll out on a floured surface 
Cut 1 or 1 and a half in diameter rounds
Place on a floured baking sheet 
Roll scraps together and repeat as above 
Dust tops with extra sugar 

Baking 
Bake at 325 degrees F or 160 degrees C for 20-25 mins 
Prick with a fork to prevent them rising
After they are finished baking place on a metal rack to cool
