Zesty meatballs in a tomato sauce with pasta
(J's favourite)
Serves 2
"Pork meatballs with zesty lemon, served with a vibrant tomato sauce and spaghetti..."
Ingredients for the meatballs
150g pork mince
Zest 1 lemon
50g grated parmesan
1tsp dried basil
Dried spaghetti
Grated cheese to serve
Ingredients for the tomato sauce
1 tbsp olive oil
1 onion, finely chopped
1 tin chopped tomatoes
1 tsp dried basil
Sugar to taste
Salt and pepper
1 tbsp tomato pesto
Method:
1. To make the sauce, heat the oil, add the chopped onion and cook on a low hear with a lid for 8 minutes until softening
2. Add the other ingredients and cook without a lid for 30 minutes to allow the sauce to thicken. Remove from the pan and cool and season again if needed
3. For the meatballs, mix together the meat mince, lemon zest, cheese and dried basil and season well.
4. With damp hands shape into balls and place into the tomato sauce
5. Allow to simmer for 25 minutes until cooked through
6. Bring a pan of water to the boil, add the dried spaghetti and cook as per instructions.
7. Drain well, stir through the tomato sauce and meat balls and serve in a pasta bowl with grated cheese on top.
